Fully-ripe Fuggles Hops

At Atlas we seek to combine a modern, international approach to great
beers with a deliberately old-fashioned, meticulous attention to quality.
First of all, we start off with the very best ingredients we can find.
Since more of the cost of the final pint is tax and transport than ingredients,
any brewery which skimps on ingredients is - in our humble opinion - barking
mad. So we don't. Only the very best Scottish malted barleys,
together with some lager malt for Latitude and a little malted wheat for
body and mouthfeel. We only buy whole grains, and mill them at the
brewery for the freshest possible beers. Then the best hops we can
find... always whole-leaf hops rather than any modern pellets or hop extracts.
Then the water: well, it's a blessing in deep disguise some of the time,
but the West Highlands has the highest rainfall in the UK. And our
water comes straight from Blackwater, on the remote Rannoch Moor - the
cleanest Highland mountain water you can get!
